I happened to see pancetta in stock at Cold Storage so I decided to buy some and make Amatriciana properly this time round. Here I used some roma tomatoes that happened to be available as well that day. These are better for sauces that the usual round ones which are more for salads.

Spaghetti all’Amatriciana

Spaghetti all’Amatriciana is a pasta recipe that originates from the town of Amatrice in Lazio. Traditionally it is made with guanciale and pecorino cheese but since I have neither, I used pancetta slices and parmigiano reggiano instead. Chopped up the pancetta slices and a small onion.
