Chicken Fajitas

This time I’m going to try making a basic Mexican recipe, chicken fajitas.


Slice up all those onions, red pepper and chicken breasts into long thin strips and throw them into 1 big pot.

Add paprika, salt, black pepper, some olive oil, lime juice, and a dash of chili powder.

Mix it up vigorously πŸ˜€


Make tomato salsa by chopping up a bunch of cherry tomatoes.

Add juice of half lime, black pepper, salt, a dash of chili powder again.

End off with a good lug of olive oil and churn it up.


Heat up a pan until it’s screaming hot.

Throw everything in, drop a bit of olive oil in and start turning everything over continuously.

Once the chicken looks cooked and the onions and peppers are a bit toast, it’s ready.


Serve with warm tortillas and some yoghurt.


It would have been better to use a proper griddle pan instead of a stainless steel pan because the chicken would keep sticking to the bottom and I had to add more olive oil to lubricate them all. The wetness made the whole thing turn into something more like chicken stir-fry. But that being said, it still tasted fucking delicious! πŸ˜€
