Cutting of the tuna

There happened to be a tuna cutting session when I was Isetan last week so I decided to take a look. Here is the chef prepareing to cut open the main body.
Here we see that he has removed a quarter of the body for further chopping up.
Here you can see them cutting up chunks of fresh tuna into sashimi slabs.
Here the guy on the right has a big chunk of toro…mmm
I bought this slab of bluefin tuna, very fatty part 😀
It really really melts in your mouth.
