Spaghetti all’Amatriciana

Spaghetti all’Amatriciana is a pasta recipe that originates from the town of Amatrice in Lazio. Traditionally it is made with guanciale and pecorino cheese but since I have neither, I used pancetta slices and parmigiano reggiano instead.

Chopped up the pancetta slices and a small onion.

Next I sauteed the onions until they became translucent.

Then throw in the pancetta and stir-fry them until they are browned

Add in tomato sauce, chili flakes, black pepper and reduce

When the sauce is thickened, throw in the spaghetti and parmigiano

Mix well and serve. Yummy! 😀
