Spaghetti with prosciutto, semi-dried tomatoes and Kalamata olives

My friend bought me back some prosciutto from Australia, Spanish style sweet serrano, so we decided to make this dish to use it.

Olive oil, herbs and a blender.

Semi-dried tomatos

Kalamata olives. These are different from the normal green or black olives, instead a deep aubergine colour. They have a very rich flavour as well, compared to the normal olives.

Boiling vine tomatoes so as to peel their skin off. Vine tomatoes are sweeter than normal cooking tomatoes and have a stronger and firmer texture.

Chopping up all the ingredients

Fry up all the ingredients then pour in the vine tomato puree. Add liberal amounts of basil and black pepper.

After reduction, add pasta and mix it up good

Spaghetti with prosciutto, semi-dried tomatoes and Kalamata olives, done.
