Pork sausages with smothered onions and tomatoes

I was looking for a simple meal to cook so I decided to try out this one that just involves sausages, onions, tomatoes and waiting.

Using simple pork sausages with mild herbs and no spices.

Of course the onions and tomatoes

So basically you put in the onions with olive oil and “smother” it by covering with the lid, occasionally stirring it.

And when it finally browns (a bit too deeply in my case), slosh in the tomatoes and grind lots of black pepper!

After a bit of simmering, put in the sausages and prick them with a fork so that they can absorb the juices. Turn them occasionally so that they’re cooked evenly as well for about 20 mins.

And that is your very simple pork sausages with smothered onions and tomatoes!

And you can even clean up the extra sauce with some bruschetta, it tastes amazingly rich!

Oh this looks delicious – and reminds me of my Italian pals cooking for us in our Munich dormrooms – a mix of Italian cooking and Bavarian-style sausages! πŸ˜€
