The Great Prosperity is a dish that my family saw on episode 10 of 三 菜一汤 3 and we decided to make it for Chinese New Year reunion dinner this year. If you want to see how it’s being made by Chef Ho, watch this video.
But here’s my attempt to make it. We briefly immerse the pig skin, chicken thighs and lean pork meat into hot water to get rid of the blood residue.
Seasonings are 2 tbsp of oyster sauce, 1 tbsp of dark soy sauce, some rock sugar, 1 stick of cinnamon and 1 star anise.
Dump everything into 1 pot
Top up with enough water to cover and use some of the abalone liquid as well. Then throw in all the seasonings as well.
Bring to the boil, cover and switch to low heat to simmer for about 4 hours.
After 4 hours, everything has the same colour!
This is a poor attempt at plating it, together with some black moss and kailan. But we were so busy preparing many other dishes so this is the best we could do.
