This is probably one of the rare posts where I don’t have to say anything because it’s so simple and the photos say it all.

just beef and chicken minced meat with pepper and salt?

I used beef only, and seasoned with pepper & salt. The ideal mix is 50% chuck, 25% short rib & 25% brisket, as according to Heston Blumenthal. The best is to grind it at home yourself if you have a KitchenAid machine, otherwise you can ask the butcher to do it.
