Piri-piri Chicken

Posted on: October 24, 2012

Piri-piri chicken is actually simply chicken cooked with the piri-piri sauce, which is a sauce that is Portuguese in origin and is so named because it uses the African piri-piri peppers, something akin to our local chilli padi.

Making the piri-piri sauce involves blending the chillis, onions, garlic, lime juice, salt and olive oil.

Finishing up with some paprika, basil and a bit of Worcestershire sauce.

Resulting in a brown muddy slurry

Grilling the chicken on the outside

Throwing red & yellow peppers to grill as well

Put the chicken and peppers into the pot then throw in a bit of thyme for flavour.

Now it goes into the oven for about 10-15 minutes

And there you have, piri-piri chicken!

Lovely post. the chicken looks amazing. I remember having Piri Piri Chicken on a beach in Portugal over 25 years ago. Lovely memory.
