Noodle Soup with Mussels

This recipe was taken from Family Meals: Home Cooking with Ferran Adria, a pretty interesting cookbook with great photo by photo steps for each recipe.
The recipes in this book are mostly those that they use for staff meals, so they’re relatively simple and usually fast to make. But there’s a caveat and that is since his staff is quite large, the portions are usually for large quantities. Scaling down doesn’t always work.
Anyway, this is a simple dish that I picked out for dinner – really no fuss just throw everything together in one pot.
Preparing the picada sauce, 2 tsp.
2 cups of stock, I used chicken because I didn’t have fish stock on hand.
Break up those long strands of spaghetti into much smaller pieces.
Fry the pasta until they change colour, a bit golden and toasty.
Add 1/4 cup of sofrito and continue to stir.
Stock and picada sauce get added now.
Boil for 10 minutes.
Finally the mussels go in now, to simmer for 5 minutes or so.
And voila, simple dinner done!
