A ragout is basically a stewed dish so in this dish, the main ingredient is the humble mushroom.
Many button mushrooms were chopped and drained.
The ragout needs to go with some carbs so I went with the healthy farro.
It’s slowly simmered in vegetable stock to plump up.
For an added umami boost, I rehydrated some dried porcini mushrooms.
And sautéed them with onions.
The chopped mushrooms are added to the sautéed porcini.
Now the farro has absorbed all the stock!
Tomatoes are finally added and reduced.
The end result, a mushroom ragout!
