Trattoria Sostanza is one of those places that’s literally stuck in a time warp. It was opened in 1869 and 1.5 centuries later, they’re still around and churning some of the best food in Florence!
I thought it was going to be hard to find Sostanza but the line of tourists at the door waiting for it to open made it easy to identify. And while I waited, I inspected the hand-written menu that they pasted up on the front.
Once inside, you can see their walls lined with that 150 years of history.
The interior hasn’t changed much either.
This is their signature dish, petti di pollo al burro. It’s basically chicken breasts first quickly grilled over coals, then coated with eggs and flour and then placed in a dish of butter to be cooked over coal embers again.
So simple yet producing something so epic. It’s pretty hard to describe how good this was in words except I really regret not ordering a few more plates of this!!!
Definitely gotta order bistecca alla Fiorentina when in Florence. Really good as well.
This was their tortellini in brodo but I just felt it was lacking in flavour, both broth and the tortellini.
Don’t miss this place if you’re in Florence, and you’d better make a reservation too! Your life will change after eating that chicken.
