In 2014, Andre Chiang returned back to his birth country of Taiwan to open RAW, a restaurant embracing his ‘bistronomy‘ concept, where fine dining turns casual.
Just before dinner’s opening hours, the shades are down but go up the moment it strikes 6.
The cuisine of RAW has its roots in French and Italian fine dining, but reinterprets them through the lens of Taiwanese food culture and native ingredients.
RAW really has some beautiful but modern decor, designed by Studio Weijenberg.
Pull-out drawer with cutlery that you replenish after every dish.
There’s only 1 set menu for dinner and it’s an 8 course meal.
Dinner at RAW is probably one of the best meals I’ve had in a long time, probably exceeding anything I’ve had in Singapore, even at all those high-end restaurants with their fancy degustation menus. The ingredients were fresh, the flavours were clean, and the dishes were interesting!
I highly recommend trying to book a dinner here but you really have to keep your mouse finger super ready because the online reservations fill up unbelievably fast.
