Itek tim is one of my favourite soups, and it’s basically a Chinese style soup made with pickled mustard greens boiled with duck meat at its core.
The Peranakans added an extra layer of flavour with their tamarind skins.
Ginger, sour plums, tamarind skins.
Very rich and flavourful soup, especially if you opt to add a splash of cognac like some do.
