I actually had a chance to eat at that hot new Michelin 1 star ramen place Tsuta but I gave up the ticket because it was for lunch at 3pm, totally out of my plans 😦
So instead I visited this backup ramen place I prepared called Motenashi Kuroki near Akihabara.
In an ironic twist of fate, I ended up reaching Motenashi and queued up until 3pm! And I was also the last one in the queue!! They didn’t accept anyone else who tried to queue after me.
This is their special shio ramen bowl! It’s a sardine-based soup stock, which is great as I now prefer non-tonkotsu broth ramen.
It’s not one of those epic flavour punches but instead a large variety of little components that add many faceted subtlties and build up to a complex profile at the end.
